Summer-green butter with Västerbottensost

A classic accompaniment that receives a verdant touch for summer. Grated lemon peel gives a fresh bite.


Approx. 4 people

10 cl grated Västerbottensost®
75 g butter in cubes
2 ml sea salt flakes

Can be upgraded thus:

15 leaves of fresh spinach
1 lemon, grated outer peel
1–2 tbsp rapeseed oil
Fold everything into a bowl and mix with hand blender.


Whisk together the butter and cheese. Fill a small bowl, sprinkle with a little sea salt flakes and place in the fridge.
