Steaks filled with Västerbottensost

4 servings

500 g minced beef or game
1 finely chopped shallot
2 tbsp butter
4 tbsp dried breadcrumbs
150 ml milk
1 egg
1½ tsp salt
1 pinch black pepper
1 tbsp finely chopped fresh thyme
100 g Västerbottensost
1 kg almond potatoes
200 ml whipped cream
1 tbsp concentrated veal stock
250 g small frozen peas
200 ml lingonberries
50 ml granulated sugar

Gently fry the onions. Mix the breadcrumbs and milk. Allow to soak for a little while. Add eggs, salt, pepper, onion and thyme. Stir in the mince and mix to a smooth dough. Cut the cheese into cubes. Shape the mince into patties. Roll a piece of cheese in the middle of each mince patty. Boil and crush the almond potatoes. Fry the patties in butter. Bring the cream, veal stock and gravy, if included, to the boil. Boil the peas. Serve the patties with peas, preserved lingonberries, crushed almond potatoes and sauce. Garnish ideally with fresh thyme.
