Puff pastry baked cheese

4 frozen puff pastry sheets
400 g Västerbottensost, in thick slices
around 50 g butter, melted

Served with: 4 tbsp cloudberry jam vanilla ice cream

Preheat the oven to 225°C. Thaw the puff pastry and roll out the sheets. Add a slice of cheese to each pastry sheet, wrap and close properly. Brush with butter. Place the filled sheets on a baking sheet and bake for about 15 minutes, or until the pastry sheets are golden. Serve as a dessert with warm cloudberry jam and a little vanilla ice cream.
