Preserved apples

4-6 servings

Serve with chocolate sauce flavoured with Västerbottensost.

Preserved apples

100 ml granulated sugar
50 ml cider vinegar
750 ml white wine
60 ml Calvados
½ vanilla pod
1 ml salt
4–6 small apples
100 g butter
2 tbsp unrefined sugar

White chocolate sauce flavoured with Västerbottensost

100 ml cream
200 g good-quality white chocolate
Flavour with ½ vanilla pod
50 g Västerbottensost
A pinch of salt

Preserved apples:Melt the sugar in a pan with vinegar until the sugar has dissolved. Pour in wine, Calvados, vanilla and salt, allow to boil for 4–5 minutes.
Peel and core the apples and place them in the boiling liquid. Cover with baking parchment. Leave to stand and draw off the heat for 8–10 minutes. Take out the apples with a slotted spoon and place on a baking tray. Place a thin sliver of butter on the apples (use a cheese parer) and sprinkle on the unrefined sugar. Bake the apples in the oven at 180 °C for 10 minutes before serving.

White chocolate sauce flavoured with Västerbottensost: Grate the cheese and the chocolate in a stainless steel bowl. Boil up the cream with seeds from the vanilla and a pinch of salt. Pour the cream over the chocolate and stir into a smooth mixture. Let the mixture stand at room temperature for a few hours before serving.
