This is not a traditional pizza, but rather a Norrlandish interpretation as the ingredients comprise flatbread, potatoes and, of course, Västerbottensost cheese! No hassle, only pleasure. Perfect to take along on picnics as it is just as delicious cold. A good idea would be to top with whitefish roe or other toppings at the picnic spot. Enjoy!
400 g Västerbottensost cheese
400ml crème fraîche
1 red onion
80 g whitefish roe
1 scallion/spring onion
pepper to taste
Preheat the oven to 250 C. Blend the egg, 300 ml crème fraîche, 250g Västerbottensost cheese and pepper. Brush the mixture onto the flatbreads all the way to the edges. Cut the red onion into thin slices and use a cheese slicer to cut the potatoes. Sprinkle the potatoes, red onion and some more Västerbottensost cheese onto the flatbreads, on top of the white sauce. Bake in the oven for approx. 5-7 minutes until it has taken on color. Garnish with whitefish roe, chopped scallion, dill and crème fraîche. Last but not least, a little more pepper.
