Pickled Västerbotten herring fillets

Give your midsummer table flavours from Norrland in just a few minutes.

1. Choose a really nice flatbread, preferably seasoned.

2. Drain 200 g of pickled herring fillets. Cut into smaller pieces and place on the bread.

3. Mix 200 g of crème fraîche with summery herbs of your choice and grate 80 g of Västerbotten cheese. Place a dollop of the mixture on top of the herring.

4. Top with a handful of summery herbs and finely grate lemon peel.


200 g Crème fraîche

1 bunch of summery herbs

80 g Västerbotten cheese

200 g pickled herring fillets, drained weight

1 lemon, peel and juice
