4 raw lobsters
2 shallots, peeled and chopped
1 clove of garlic, peeled and crushed
1 tbsp Dijon mustard
250 ml crème fraîche
sea salt and freshly ground black pepper
200-300 ml grated
Preheat the oven to 175°C.
Divide the lobsters lengthwise and place them cut side up in an oven proof dish.
Mix the shallots, garlic, Dijon mustard and crème fraîche. Season with salt and pepper. Spread the mix over the lobsters and sprinkle with Västerbotten cheese. Gratinate for 6-7 minutes or until the cheese has browned slightly.
