Lingonberry and cola pie

Pie pastry:
125 g butter
2 tbsp granulated sugar
250 ml wheat flour
1 egg
1 tbsp water

300 ml whipped cream
100 ml granulated sugar
50 ml light syrup
300-400 ml lingonberries

Mix the butter, sugar and wheat flour into a crumbly texture. Add eggs and water. Work quickly into a dough. Press out the dough into a pie dish, about 24 cm in diameter. Let stand cold for about 30 minutes. Bake the pie shell at 200ºC for 15-20 min. Mix the cream, sugar and syrup. Let cook over a low heat for about 15 minutes. Add the lingonberries and stir. Pour the lingonberry cola into the pie shell just before serving. Serve ideally with cold whipped cream flavoured with cinnamon.
