Leg of chicken filled with Västerbottensost

3 tomatoes
1 bunch of sage
8 boneless chicken legs
1 package of bacon
100 g Västerbottensost
2 tbsp Dijon mustard
200 ml tomato juice
200 ml chicken broth
1 bag of gnocchi
100 ml olive oil
8 shallots, divided
white pepper
olive oil

Cut the tomatoes into wedges. Season with salt and pepper and shred some sage leaves over. Roast the tomatoes in the oven at 125°C for about 40 minutes. Flatten the chicken legs and fill them with bacon, cheese and mustard. Roll them up and secure with a toothpick. Season with salt and pepper. Brown the chicken along with some sage leaves. Pour in the tomato juice and broth. Braise in a sauté pan or in a shallow saucepan over a low heat for about 20 minutes. Boil the gnocchi for one minute and then sizzle it in olive oil together with the onions for about 3-4 min. Add some sage towards the end. Allow it all turn a little crisp. Add the tomatoes and gnocchi to the pan.
