600 g of herring fillet
200 ml single cream
100 ml finely chopped dill
finely grated zest from ½ lemon
100 ml grated Västerbottensost
1 tbsp salt and pepper
Preheat the oven to 225°C. Grease an oven proof dish. Rinse the herring and cut off the dorsal fin. Roll the herring fillets skin side outwards. Pack them tightly into the oven dish. Sprinkle over half the salt. Mix the single cream with dill, lemon zest, Västerbottensost, pepper and salt. Pour the cream over the herring. Bake in the middle of the oven for about 20 minutes. Serve with mashed or boiled potatoes.
