Herring, eggs and Västerbottensost

4 servings

1 can of 5-minute herring in pieces (420 g)
2 cold hard-boiled eggs
100 ml cooking yoghurt
50 ml mayonnaise, preferably home-made
150 ml coarsely grated Västerbottensost
2 tsp Dijon mustard
1/2-1 pinch of cayenne pepper
50 ml chopped dill

I was invited to taste this herring at a shop demonstration and I immediately took it to heart. I usually exclude the mayonnaise and I consider it to be just as good (and healthier). Best served on a piece of flat bread.

Let the herring drain, peel the eggs and cut into pieces. Mix the cooking yoghurt, mayonnaise and Västerbotten cheese.

Stir the mustard and cayenne pepper into the mix. Season with salt. Add the herring and eggs. Garnish with dill. Let stand for a while before serving.
