Herb creamed potatoes

1 kg potatoes, boiled
400 ml milk
100 ml whipped cream
1 tbsp corn flour
100 g Västerbottensost
1 tsp salt
1 pinch of ground white pepper
2 tbsp coarsely chopped herbs such as chives, dill or parsley

Peel the boiled potatoes and cut into centimetre thick slices. Bring the milk and cream to the boil. Mix the flour with a little water. Stir into the milk and whisk until it thickens. Stir in the cheese and let it melt into the sauce. Season with salt and pepper. Add the potatoes just before serving. Garnish with herbs and cheese slices. Serve ideally with a few lime wedges.
