4 pieces of Västerbotten cheese à 50 g
200 g fresh or frozen cloudberries
1 star anise
2 tbsp apple cider vinegar
3 tbsp sugar
cooking time 15 minutes
Boil the cloudberries, star anise, vinegar and sugar. Let simmer for 10 minutes. Tear 4 pieces of cooking foil and place the cheese on top of the foil, and fold up. Preheat the oven to 200°C. Place the cheese package on the grill in the oven for about 3 minutes. Serve with lukewarm cloudberry chutney.
