Västerbottensost cheese in a galette produces a delicious and powerful flavor. A galette is similar to a pie but is baked without a mold. This means you can shape it exactly as you wish. I selected to make round mini-galettes filled with cheese and figs. If you’d prefer something else other than figs, I recommend using pears or even asparagus. Use either homemade pastry dough to make the galettes or purchase ready-made dough available in a roll. Enjoy!
250 g pastry dough in a roll (or homemade)
4 fresh figs
4 Tbsp. cream cheese
80 g grated Västerbottensost cheese
1 egg for brushing
Preheat the oven to 225 C. Roll out the pastry dough and cut out four circles, approx. 13 cm in diameter. There should be enough dough for one more if it is rolled out. Spread approx. 1 Tbsp. of cream cheese onto each circle, but not all the way to the edges. Sprinkle with grated Västerbottensost cheese. Top with fig slices, 5 slices for each galette. Fold the sides. Place the galettes in the freezer for about 5 minutes so that they keep their shape during baking. Brush the edges with the beaten egg. Bake in the bottom section of the oven for about 15 minutes. Drizzle with honey and sprinkle with chopped walnuts. Serve and enjoy!
