Cranberry chocolate with flakes of Västerbottensost® cheese

Exciting flavours that go unbelievably well together.


50 g Grated Västerbottensost® cheese
100 ml pistachio nuts
50 g dried cranberries
200 g dark chocolate, e.g. Valrhona Guanaja 70%
Rock salt


Place the Västerbottensost cheese on a baking tray lined with baking parchment and bake in the oven for about 5 minutes at 225˚C until it turns a good colour. Allow it to cool and crush it into flakes. Coarsely chop the pistachio nuts along with the cranberries.

Melt the chocolate on a low heat in a saucepan. Pour out onto baking parchment and top with the nuts, cranberries and cheese.

Finish off with rock salt. Allow to cool and then break into pieces.
