pie pastry:
200 ml wheat flour
100 ml Graham flour
115 g butter
2 tbsp crème fraîche
1 tsp salt
filling:
2 eggs
250 ml medium cream
100 g grated Västerbottensost
200 g ham in strips
1 red onion, sliced
1 pinch of salt
2 pinches of pepper
Mix all the ingredients for the dough in a food processor. Press out the dough with your thumb into a pie dish, about 25 cm in diameter. Whisk together the eggs, cream and cheese. Add salt and pepper Stir in the ham and onions. Bake at 200°C for 30-40 minutes, or until the pie has set. Serve it hot or lukewarm.
