Cauliflower soup with grilled sourdough and chopped tomatoes


Follow these steps

Try this tasty cauliflower soup with spinach and Västerbottensost®. It’s bursting with delicious flavors.


120 g grated Västerbottensost®
1 cauliflower
1 vegetable or chicken stock cube
300 ml water
300 ml cream
1 bag of fresh leaf spinach
4 slices of sourdough
4 tbsp olive oil
4 tomatoes
Salt and pepper


Finely chop the cauliflower and bring it to the boil with the stock cube in the water. Simmer for 10 minutes and then add the cream. Put a few spinach leaves on one side to accompany the chopped tomatoes, then add the rest of the spinach to the cauliflower and blend to make a smooth soup. Add the cheese and stir until it has melted. Season with salt and pepper. Drizzle olive oil over the bread and grill it in the oven for around 3 minutes at 250°C until it is golden brown. Finely chop the tomatoes and the spinach, season with salt and pepper and spread them on the bread.
