Cannelloni with Västerbottensost® and uncooked tomato sauce


Serve your cannelloni with an uncooked tomato sauce flavoured with smoked paprika. And why not make a crisp salad to accompany it?


150 g grated Västerbottensost®
300 g fresh mushrooms
200 g ricotta
1 packet of fresh lasagne (around 250 g)
1 tin of cherry tomatoes
1 tbsp smoked paprika
50 ml granulated sugar
1 tsp dried thyme
2 tbsp olive oil
Sea salt and pepper


Slice the mushrooms and mix them with the ricotta, Västerbottensost, salt and pepper. Spread the mixture over eight sheets of lasagne and roll each sheet up. Put the rolls in a buttered ovenproof dish with the join downwards. Mix the tomatoes with the paprika, sugar, olive oil and thyme. Spread the mixture over the cannelloni and top with grated Västerbottensost. Cook in the oven at 225°C for around 15 minutes. Sprinkle with fresh thyme and serve with the salad.
