Breakfast Semla with Västerbottensost Cheese

Start the day with a heavenly breakfast semla (Swedish sweet roll) where Västerbottensost cheese meets Armenian food culture.


Serves approx. 4

To make four rolls, you will need:

500 ml flour
250 ml water
1 tsp. salt
1 Tbsp. cooking oil
½ packet of fresh yeast
Poppy seeds

4 eggs
Cherry tomatoes
Grated Västerbottensost cheese
Salt and pepper



Preheat the oven to 250 C. Mix all the ingredients in a bowl and knead into a firm a dough. Cover the dough in the bowl and allow to rise for approx. 15-20 minutes. Divide the dough into four portions and shape into round balls. Brush on some water and sprinkle with the poppy seeds. Bake in the oven for about 10 minutes at 200° C. Cut off the top of the buns and scoop out the contents to form a cavity. Fill with chopped cherry tomatoes, break over an egg and sprinkle with Västerbottensost cheese. Season with salt and pepper. Wrap the buns in tinfoil and place them back in the oven for about 10 minutes. Remove the buns, sprinkle some chopped scallions over and serve.
