Anchovy-stuffed Västerbottensost croustades

1 packet croustades about 15-20 pcs
100 g grated Västerbottensost
1 egg
100 ml whipped cream
salt and white pepper
1 small yellow onion
1 tbsp butter
2 tbsp granulated sugar
1 small can of anchovy fillets
1 bunch of dill

Preheat the oven to 150°C. Fill the croustades halfway with cheese. Mix together the egg and cream. Season with salt and white pepper. Fill the croustades with the egg mixture and bake for about 10 minutes. Chop the onion, fry it in butter and add the sugar after a while. Let the sugar melt until it turns into a yellow/brownish caramelised liquid. Serve the croustades lukewarm with sugar-fried onions, a small anchovy fillet and dill.
