Västerbottensost, hazelnuts and cloudberries

300 g Västerbottensost
1 egg
4 tbsp wheat flour
100 g chopped hazelnuts
3 tbsp butter
200 ml cloudberries
100 ml granulated sugar

Cut the cheese into centimetre thick slices and whisk the egg. Start by adding the cheese to the flour, then the egg and finally the hazelnuts. Fry the cheese slices in butter until golden brown in a medium hot frying pan. Mix the cloudberries and sugar. Serve the cheese with cloudberry preserve. Garnish to taste with fried parsley.
