Phyllo dough cigars

2 tbsp olive oil
1/2 yellow onion, peeled and sliced
2 cloves of garlic, peeled and chopped
150 g baby spinach
250 ml coarsely grated Västerbottensost
1/2 pinch of grated nutmeg
salt and pepper
8-12 phyllo dough sheets
100-200 ml olive oil

Served with: salad and optional dipping sauce

Heat oil in a pan and fry the onion without browning. Add the spinach, mix it in quickly. When it begins to release liquid, remove the pan from the heat. Let the spinach mixture cool and drain. Mix in the Västerbottensost and nutmeg. Season with salt and pepper. Preheat the oven to 200°C. Lay out a phyllo dough sheet, brush half with olive oil, fold once, brush fully with oil. Add a string of cheese and spinach mixture at one end and then roll up into a cigar. Place the cigars on a baking sheet with baking plate paper and brush them with oil. Bake the cigars for 8-10 minutes or until golden. Serve ideally with salad and dipping sauce.
