Herb-flavoured fillet of pork with potato au gratin

Ingredients:
1 kg potatoes
a knob of butter
250 ml single cream
100-200 ml milk
1-2 cloves of garlic
100 ml grated Västerbottensost
1 kg fillet of pork
100 ml finely chopped fresh thyme, salt and pepper

Method:
Preheat the oven to 200°C. Peel and slice the potatoes. Put them in a greased oven dish and add the cream and milk. Crush the garlic cloves and add. Season with salt and pepper. Sprinkle on the cheese and bake for about 45 minutes. Brown the meat in the meantime in a pan on the stove. Season all around with salt and pepper. Place the fillet in the oven and roast for about 20 minutes. Remove the fillet. Roll it in chopped thyme in greaseproof paper. Let it rest for a few minutes wrapped in the greaseproof paper before slicing. Serve with the gratin and a green salad.
