Crayfish salad with Västerbottensost

200 g crayfish tails
100 g sliced Västerbottensost
2 tbsp lemon olive oil
1 tbsp lemon vodka
finely grated zest from 1/2 lemon
100 ml light crème fraîche
2 boiled eggs
2 boiled almond potatoes
1 head of romaine lettuce
2 tbsp coarsely chopped dill
2 tbsp chopped chives
White pepper and salt

Place the crayfish in the lemon olive oil, vodka and lemon zest. Mix gently and leave to marinate for about 30 minutes. Cut the potatoes and eggs into wedges. Shred the lettuce coarsely and save some nice leaves for garnish. Mix all the ingredients gently and season with pepper and salt. Prepare in a nice glass bowl and garnish with romaine lettuce, sliced Västerbottensost and chives.
